HACCP: Hazard Analysis Critical Control Point, method and principles of food safety management
The HACCP knew an original course, while passing from the industrial tool to the concept, the concept to the method, the method to the system, while being validated by authorities international, scientific, legislative and industrial.
All started in the Sixties, in the United States, when NASA and the army plan to send men in space. It was then necessary to be able to guarantee the safety of food of the astronauts without having for as much destroying the products to analyze them. The authorities require then of a company, the Pillsbury company, to develop a tool making it possible to ensure of the sure products. This tool was the first outline of method HACCP, created by Mr. Bauman, who since is recognized like the father of the HACCP.
